There is a certain part of our production process, which makes us fairly unique among the malt whisky distilleries of the world. Our stills are made to withstand vacuum distillation. This enables us to lower the boiling point when we distil. In our wash stills, the pressure is reduced enough to lower the boiling point by 30 degrees, and in our spirit stills we lower the boiling point by about 10 degrees. This provides a gentler treatment of the raw materials, avoiding the risk of burning or over-boiling, and eventually produces cleaner and more natural flavours. There is also the added bonus of using far less energy in the process.
