After SamuelWhisky No1, I wanted to do something completely different. I remember a special day in February 2019 when some colleagues and I emptied a container filled with 200 casks. One of those casks had previously been used to store the smoky whisky that I personally love from the Islay distillery. The raw spirit I filled the cask with was also heavily smoked and had been distilled in our Low Reflux stills, giving it a strong and heavy smokiness. When I mixed it with medium-smoked whisky from one of my bourbon casks in August 2023, I did minimal filtration and bottled it at its natural strength of 58.7%.
